Green Tea Cake Recipes for You!

My selection of green tea cake recipes includes Daifuku. Daifuku are Japanese mochi cakes. Serve daifuku with hot green tea. You can make various daifuku, just by varying the filling.

Here is a traditional recipe to make basic daifuku with anko (red bean paste) filling.
They will take about 30 minutes to cook and about 2 hours to prepare.

Method:

Heat 2/3 cup of water and 1/2 cup of sugar in a small bowl. Add 1/4 cup of anko powder and stir well. Cool the anko filling. Make 12 small anko balls and set aside.

Place water and sugar in a heat-resistant bowl and mix well. Add shiratama-ko flour to the mixture and beat thoroughly. Place the bowl in the microwave and heat the dough on high for two minutes. Stir the dough a little inbetween heating.

Heat the dough in microwave until the dough rises. Stir the mochi (sticky rice cake mixture) quickly. Dust a baking sheet with some katakuri-ko starch. Also, dust your hands with some katakuri-ko. Remove the hot mochi from the bowl onto the baking sheet gently by hand.

Dust hands with more katakuri-ko starch and divide the mochi into 12 pieces. The mochi is hot and sticky, so be careful not to burn your hands.

Make 12 flat, round mochi. Put a piece of anko filling on a mochi and wrap the anko by stretching mochi. Using your hands, roll the mixture into equal sized balls. Repeat the process to make daifuku cakes.
