Chai Tea Recipe
A great Chai tea recipe! The mainstream has at realised what world travellers have known for decades: chai is a taste sensation!
Indian spiced tea now has broad appeal and is widely found at cafes and restaurants across the western world.
Chai is basically black tea brewed with selected spices and milk. Each ingredient adds subtle flavor changes and brewing methods vary widely. Here is a recipe for you that can easily be made at home...
Chai Tea
Put a mug/cup of water to boil.
Add a 3/4 inch piece of ginger, crushed with a mallet to it and let the water boil a couple of minutes (to get the ginger essence in), then pour over tea-leaves.
(I use Darjeeling and throw in one and a half heaped tsp)
Let steep two mins. or until leaves are settled at the bottom of the pot.
Pour into mug add milk, sugar and enjoy! The mix keeps in the fridge without milk for up to two weeks, or one week with milk.

Ingredients
For each litre of water:
12 whole cloves
16 green cardamom pods (crush slightly)
16 black peppercorns
2 cinnamon sticks
4 slices of fresh ginger (more if you like)
2 tsp black tea
2 cups milk
Honey
Method
In a pot, add the spices and ginger to the water and bring to the boil. Simmer for 30-40 minutes - top up with water as you go. You can let the spices sit in the water for a few hours or overnight - it can take a little experimenting to get the flavours to suit your taste. Add tea, steep for 1-2 minutes, then add milk and heat. Serve with honey.
